Cashew Coconut Cranberry Bites

These little bites make for a perfect snack if you want something a little sweet that won’t fill you with junk. They are filled with nutrition due to the main ingredients being cashews, coconut oil, cranberries, and coconut. All of these have excellent health benefits, some of which are as follows:

  • Good source of protein
  • Mood booster
  • Good brain food
  • Rich in fiber
  • Anti-inflammatory
  • Good for colon health
  • Contains anti-cancer properties

Another plus is that these are really easy to throw together and store well in the refrigerator, so they are easy to have on hand to satisfy your sweet tooth now and then.

You can also get creative with what you add to these guys. I will give the basic recipe, but you can add chopped nuts, chocolate chips, etc. I added some miniature white chocolate chips that I had leftover from a while back, and they were great, but that did take the nutrition of these guys down a small notch (worth it 😉 ). At any rate, these are great as is, or with a lot of different additions.

CASHEW COCONUT CRANBERRY BITES

Ingredients:

  • 3/4 cup raw cashews
  • 1 Tbsp. melted coconut oil
  • 1 Tbsp. Raw honey (optional)
  • 1/3 cup almond flour
  • 1/3 cup shredded coconut (unsweetened)
  • 1/2 tsp. ground cinnamon
  • 1 tsp. alcohol free vanilla
  • 1/2 cup dried cranberries (apple juice sweetened is best)
  • optional add ins: mini chocolate chips, chopped nuts, chia seeds, seeds, etc.

Directions:

1.) Place the cashews in a small bowl and cover with water. Let soak for a minimum of 15 minutes, but longer is better (even overnight).

2.) Drain your cashews and place them in the bed of a food processor. Process on high, stopping to scrape the sides occasionally, until a thick nut butter forms. Add the coconut oil and honey (if you’re using it) and process until the nut butter becomes smooth.

3.) Transfer the cashew mixture to a medium mixing bowl. Add the almond flour, coconut, cinnamon, and vanilla. Stir to combine completely. Once completely combined, fold in the cranberries and any other add ins that you are using until well combined.

4.) Use a tablespoon to scoop out 1 ball’s worth of dough. Use your hands to roll into a ball and place on a plate or container bottom. Once all of your dough is used up, place your balls in the refrigerator for 30 minutes or so to set, then you’re all set!
