Blueberry Coconut Smoothie With Hidden Veggies

You would never guess that this smoothie has a full 2-3 servings of veggies in it, but it does! This thing is packed with nutrition! Of course we know that the fruit and veggies in there provide all kinds of awesome nutrients and health benefits, but something we may be less familiar with is the health benefits of shredded coconut! Some of those health benefits include the following:

  • Provides dietary fiber – a one ounce serving of shredded coconut provides approximately 4.6 grams of fiber
  • There’s protein in there! Not a huge source, but 1 cup of shredded coconut provides 2.68 grams of protein.  Surprising, huh?
  • Iron – a one-ounce serving provides about 0.94 milligrams of iron.
  • Some healthy fats – the fat in shredded coconut (about 18.3 grams in one ounce) is the same fat in coconut oil.  Though you don’t want to overdo saturated fats, studies have shown that having them in this form and in moderation can be beneficial.
  • Here’s another surprising one – zinc!  One cup of shredded coconut provides about 1.60 milligrams of zinc.

Huh!  Who knew that something as delicious as shredded coconut is actually good for you!  All this on top of the health benefits of cauliflower, blueberries and zucchini – uh, yeah, I’d say this smoothie is pretty AWESOME!  Plus, it tastes like blueberry coconut deliciousness!


Ingredients (makes about 2 servings):

  • 2 cups frozen cauliflower
  • 1 cup frozen zucchini
  • 2 cups frozen blueberries
  • 3 Tbsp. unsweetened shredded coconut
  • 1 tsp. vanilla
  • 1/2 cup plain Greek yogurt
  • 2-4 cups of almond milk , depending on how thick or thin you want your smoothie
  • stevia, to taste


Easy Peasy – put all the ingredients in a blender and blend till smooth!
