Simple Healthy Autumn Trail Mix

I came across this really simple trail mix on accident! It’s Sunday, which means a hodge podge of meals using whatever is left in the fridge before my weekly grocery shopping trip! This afternoon, as I was trying to decide what to have for dinner, I decided on one of my Fall salad recipes that called for dried cranberries. I don’t like to use packaged dried cranberries because they are always loaded with extra sugar, so I figured I would throw some fresh cranberries in the oven and make my own to use tonight. I also wanted to have toasted pepitas (raw pumpkin seeds) on this salad, so I figured, why not mix them in with the cranberries and roast everything together?

I added the two ingredients together, drizzled them with some olive oil, then sprinkled them with a bit of stevia, nutmeg, and sea salt. I threw them in the oven for half an hour, then put them in an air tight container in the fridge to use later. About an hour later, I was craving small snack, so I went to the fridge and ended up just having a few bites of this, and realized this makes an AMAZING trail mix!

I think it would be really good with some cashews, sunflower seeds, almonds, etc. mixed in, but it’s really quite good with just these two main ingredients.  You get that tangy flavor from the cranberries with a bit of sweet and salty from the stevia, nutmeg, and sea salt.  The roasted pepitas pull it all together perfectly!

I figured I would give this little mix a post of it’s own since you could really use it for so many things.  It’s great as a snack.  I used it on the salad that I made for dinner, and it was so yummy.  I think it would go great mixed in with some of my different bread recipes.  At any rate, it puts a perfect autumn twist on anything and adds amazing flavor.  It’s also really good for you!

SIMPLE HEALTHY AUTUMN TRAIL MIX

Ingredients

  • fresh cranberries
  • pepitas (raw pumpkin seeds)
  • olive oil
  • stevia
  • nutmeg
  • sea salt

Directions

1.) Preheat oven to 400 degrees.

2.) Wash your cranberries, and cut each one in half.  Place halved cranberries and pepitas in a medium sized bowl.  Drizzle with olive oil.  Sprinkle with stevia, nutmeg, and sea salt.  Toss to coat.

3.) Line a baking sheet with parchment paper, and spread the cranberries and pepitas out evenly on the baking sheet. Place in oven.

4.) Bake in oven at 400 degrees for 30 minutes.

5.) When done, let cool, then enjoy. Store any leftovers in an airtight container in the refrigerator.
