Strawberry Summer Salad

Summer’s not over yet, guys! This week it’s been quite warm everyday here, and though I am definitely not a hot weather kinda gal, at least the hot temps let me know that summer’s still here and it’s okay to indulge in a tasty summer salad (Yay!!! Summer salads are my favorite part of summer)!

While deciding how to put this salad together, I knew I had baby spinach and strawberries, and I knew avocado would compliment those two flavors really well. Anytime it’s hot out, I always crave cucumbers for some reason, so I knew this would have to be a key component as well. Pecans and goat cheese always make really good toppers for a salad, so these would have to make an appearance. Lastly, I decided to make a really simple lemon dressing that was a bit sweet to pull it all together. I was already salivating at this point just thinking of what I wanted to mix together! This salad makes for a PERFECT summer salad on a hot day. It’s filling enough to satisfy you, but it’s also healthy and light enough to keep you feeling good and comfortable during the season of bathing suits and dressing light. Simple, great for you, delicious, and incredibly easy – yeah, I like that!

For the ingredients, I won’t put amounts, because you can use as much or as little as you would like of each one.  Also, this would be fantastic with some grilled chicken, but I didn’t have any cooked and didn’t feel like taking the time to do it – I was hangry! 🙂
