As many of you know, anytime I can add a vegetable to a meal, I do! These pancakes are no different! That is, you can actually get away with just 3 ingredients for these delicious yummies (eggs, cinnamon, and bananas), but I added zucchini to the mix for some extra nutrients! The result? Fabulousness!

As far as this recipe goes, do I think it tastes exactly like a regular pancake, no. However, I think it tastes like a delicious pancake in itself (actually, it reminded me of a mixture of a pancake and a crepe), and that is good enough for me…especially since it’s WAY healthier than traditional pancakes. I do think that if you added a small bit of coconut flour to these, they would resemble traditional pancakes even more, but these are quite tasty as is, so it’s up to you!
4-INGREDIENT PANCAKES
Ingredients: Makes about 4 pancakes
- 2 eggs
- 1 ripe banana, mashed
- 1/2 cup of shredded zucchini
- 1/4 tsp. cinnamon (you can also sprinkle in some nutmeg for a bit more flavor)
Directions
1.) Mash your banana in a small bowl. Peel your zucchini, then shred it. Add 1/2 cup shredded zucchini to the mashed banana. Add the two eggs and the cinnamon and/or nutmeg.
2.) Using a fork, stir the ingredients together until smooth. Or you can put it all in a blender and do it that way.
3.) Lightly oil a frying pan with coconut oil or olive oil and place the frying pan on medium/low heat. Measure out 1/3 cup of the batter and poor it into the frying pan. Cook on one side till you are able to flip it (about 2-3 minutes).
4.) Flip to the other side and cook till cooked through (about 1-2 minutes).
5.) Transfer pancake to a plate. Continue this process until all the batter is used up. This should make about 4 pancakes.
