I am actually chowing down on this salad as I type this! This thing is delicious, and the ingredients leave your body feeling fantastic! Over the weekend, we were at a potluck, and one of the dishes brought to pass was a Waldorf salad. I didn’t end up trying it, because I’m not a big fan of mayonnaise, which is usually a main ingredient in Waldorf salad, but just seeing it did give me a hankering for some rendition of a Waldorf salad. Thus, today, I came up with this substituted, and it did not disappoint! You’re welcome. 🙂
This salad is fantastic! It gives you the delicious taste of a Waldorf salad, with all sorts of healthy ingredients that will leave you feeling great – you will love it! Also, if you’re like me and you find mayonnaise to be a bit off putting, then this is right up your alley! 🙂
BROCCOLI APPLE SALAD
Ingredients: the amount of each ingredient is up to you
For the salad:
- Broccoli, chopped into bite-sized florets
- Apples, chopped into small pieces
- Carrots, peeled and shredded
- Red onion, chopped
- Blueberries
- Walnuts, chopped
For the dressing:
- Plain greek yogurt
- lemon juice
- sea salt
- stevia
Directions:
1.) Chop all your vegetables, then on a plate, layer your broccoli, apples, carrots, red onion, blueberries, and walnuts.

2.) In a small bowl, mix together the ingredients for the dressing. Top the salad with the dressing.
3.) Blend the salad all together.
