Brussels Sprouts and Soba Noodle Salad

Not many people get excited over brussels sprouts like I do, but they are SO good for you, and they blend well with so many different dishes!

Brussels sprouts are an excellent source of manganese, potassium, iron, calcium, magnesium, phosphorus, molybdenum, vitamin K, and folic acid. These little gems are jam packed with nutrition, so I am always trying to find or come up with recipes that include them – thankfully, that’s easy to do with these yummies!

This salad made of soba noodles and brussels sprouts is one of my yummiest recipes that I have for a brussels sprouts, and the sweet ginger dressing that tops it is divine! It’s no secret that this dish is one of my favorites, and now I am going to share it with you!


Ingredients: serves 2

  • 1/2 to 1 lb. brussels sprouts
  • 1/4 small red onion
  • 1 Tbsp. olive oil, divided
  • 4 oz. soba noodles
  • 1/2 tsp. shaved ginger
  • 1-2 Tbsp. apple cider vinegar
  • 2-3 tsp. coconut aminos (or soy sauce)
  • pinch of stevia
  • sea salt


1.) Put the brussels sprouts and onion in a food processor, and chop on high till finely chopped.  Set aside.

2.) In a small bowl, mix together 1/2 tbsp. of the olive oil with the ginger, apple cider vinegar, and coconut aminos (or soy sauce).  Add a small pinch of stevia, then taste and add more if needed.

3.) Prepare the soba noodles according to the package directions.  Set aside.

4.) In a small frying pan, heat the other 1/2 Tbsp. of olive oil over medium heat.  Add the brussels sprouts and onions and cook for 5 minutes.  Add the dressing and cook for an additional minute.

5.) Add the soba noodles to the pan.  Mix well.

6.) Remove from heat, season with sea salt and serve.
