Chicken Fried Cauliflower Rice

If you’ve ever had chicken fried rice from a restaurant, and like it, then you are going to LOVE this healthier version of the dish! It’s SO yummy, and it is made up of all healthy ingredients! By using cauliflower rice in lieu of regular rice, the dish gets all of the health benefits of cauliflower, some of which are listed below!

Not only that, but I used coconut aminos in lieu of soy sauce, which adds all of the health benefits of coconut aminos, and if you’re soy-sensitive you can still indulge in this super yummy dish. Lastly, this thing is packed with veggies! Onions, garlic, cauliflower, shallots, peas, carrots…all the good stuff! The protein from the chicken and egg turns this into an extremely healthy and well-balanced meal that is full of goodness!

CHICKEN FRIED CAULIFLOWER RICE

Ingredients (makes 4-6 servings):

  • 1 large head of cauliflower
  • 1 12 ounce bag of frozen peas and carrot
  • 1 Tbsp. coconut oil
  • 1 red onion, diced
  • 2 shallots, diced
  • 4 garlic cloves, minced
  • 2-3 cooked chicken breasts, cut or shredded into tiny pieces
  • 2 eggs
  • 1/2 tsp. garlic granules
  • 3 Tbsp. coconut aminos
  • Sea salt and pepper, to taste

Directions:

1.) Prepare the frozen peas and carrots as directed on the package and set aside. Cut the cauliflower into florets, and place in the bed of a food processor. Process on high until the cauliflower has a rice-like consistency. You may need to do this in batches depending on the size of your food processor.

2.) Heat the coconut oil over medium heat in a large frying pan. Add the onion, shallots and garlic, and cook for 2-3 minutes until the onions start to sweat. Add in the cooked chicken and cook for an additional 2 minutes. Add the cauliflower rice and the garlic granules. Cook for 4-5 minutes. Add the prepared peas and carrots and cook for another 2-3 minutes.

3.) In a small bowl, use a fork to whisk the two eggs. Add the eggs to the pan, and stir to coat. Cook for 2-3 minutes until the egg is completely cooked.

4.) Remove from the heat and add the coconut aminos. Stir to combine, then transfer to plates and season with sea salt and pepper to taste, then serve.
