Cooked Brussels and Apple Salad

An apple a day keeps the doctor away…and if it’s in this salad, it’s also DELICIOUS! This salad has a sweet and salty type of tangy taste to it, and it is so yummy. It’s also loaded with health benefits, because its main ingredient is brussels sprouts!

I just love getting a whole bunch of awesome health benefits in what feels like a tasty treat!  On top of all that great nutrition and taste, this is quite easy to throw together, and only takes 10-15 minutes to make, so in other words, it’s pretty much perfect!

COOKED BRUSSELS SPROUT AND APPLE SALAD

Ingredients (makes 2 servings):

  • 1 Tbsp. coconut oil
  • 1 lb. brussels sprouts, finely chopped
  • 2 medium sized apples, cored and shredded.
  • 1/2 red onion, chopped
  • 2 shallots, chopped
  • 2 garlic cloves, minced
  • 1/4 tsp. garlic granules
  • 1/2 tsp. dried oregano
  • 1 Tbsp. apple cider vinegar
  • 2 ounces crumbled soft goat cheese
  • sea salt, to taste

Directions:

1.) In a medium frying pan, heat the coconut oil. Add the onion, shallots, and garlic. Cook for about 3 minutes until the onions are sweating and starting to tender. Add the chopped brussels sprouts, garlic granules, and oregano. Stir to combine and cook for another 3-5 minutes until the brussels sprouts are tender. Add the apple and the apple cider vinegar. Stir to combine, and cook for an additional 1-2 minutes.

2.) Transfer to plates, season with sea salt, and top with the crumbled goat cheese. Serve warm.
