Ready for one of the easiest, yet yummiest dinners ever? Well, here you go! This turmeric spiced cauliflower rice and chicken is definitely one of my favorites! It’s so flavorful, and SO SO good for you! Plus, I had dinner on the table in about 15 minutes with this stuff!

On top of all that, this dish packs a healthy punch of protein from the chicken, and the veggies and other spices in here provide tons of other health benefits. I’m telling you, this stuff is GOLDEN (and not just because turmeric turns everything yellow)!
TURMERIC CAULIFLOWER RICE AND CHICKEN
Ingredients (makes 2-3 servings):
- 1 Tbsp. coconut oil
- 1-2 shallots, peeled and chopped
- 1/2 red onion, peeled and chopped
- 2 cloves garlic, minced
- 1 large bag (16+ ounces) of frozen cauliflower rice – you can also make your own by throwing a chopped up head of cauliflower in the food processor until it makes a rice like consistency.
- 2 cooked boneless and skinless chicken breasts, cut into bite-size pieces
- 1/4-1/2 tsp. tumeric
- 1/4-1/2 tsp. garlic granules
- 1/4-1/2 tsp. cumin
- 1/4-1/2 tsp. paprika
Directions:
1.) Heat the coconut oil over medium heat until melted. Add the shallots, onion, and garlic cloves, and cook until they start to sweat (about 2 minutes). Add the cauliflower rice and cook until completely thawed and heated throughout (about 7 minutes). Add your spices, and cook for an additional minute or so.
2.) Transfer the cauliflower rice to plates, and then throw the chicken in the same pan you used to cook the cauliflower in. Heat over medium heat until the sides of the chicken pieces are lightly browned (about 2-3 minutes).
3.) Place the chicken on top of the cauliflower rice on the prepared plates, season with sea salt and pepper, if desired, and serve.
