Oh my goodness…this. casserole. SO delicious!!! This is a super simple, yet incredibly delicious casserole that makes for a perfect brunch dish! In fact, I served it for brunch when I had some friends over, and it was a HUGE hit!
Not only is it super yummy, but its main ingredient is cauliflower, so of course it’s got tons of health benefits, with this awesome cruciferous vegetable being its main ingredient!

So, all those benefits in a super tasty casserole that is pretty easy to throw together…I’ll take it! The ingredient list will look super simple, but don’t let that fool you into thinking this is a bland dish…it is anything but! Try it…you can thank me later!
TWICE BAKED CAULIFLOWER AND TURKEY CASSEROLE
Ingredients:
- 3/4 lb. ground turkey
- 1/4 tsp. garlic granules
- 1 large head of cauliflower, cored and cut into florets
- 1 bunch of green onions, chopped (about 1/4-1/2 cups worth)
- 3 ounces cream cheese
- 1/4 cup Parmesan cheese
- 1/2 cup plain greek yogurt
- 1 cup sharp cheddar cheese
Directions:
1.) Preheat the oven to 350 degrees. Place the ground turkey and garlic granules in a large frying pan, and cook over medium heat until no longer pink. Set aside.
2.) Bring a large pot of water to a boil. Sprinkle in some sea salt, and add the cauliflower florets. Reduce the heat, and cover. Cook until the cauliflower is fork tender, but not mushy (about 7-8 minutes or so). Drain in a strainer, then place back in the pan, and use a potato masher to mash the cauliflower leaving some small chunks.
3.) Add in half of the ground turkey, the green onions, the cream cheese, the Parmesan cheese, and the sour cream. Stir to combine completely.
4.) Transfer the mixture to an 8 by 11 glass baking dish. Top with the rest of the ground turkey and the sharp cheddar cheese.
5.) Place in the oven and bake at 350 degrees for about 30 minutes (until the cheese is all melted and bubbly). Remove from the oven and allow to sit in the pan for 5-10 minutes, then serve.
