Unstuffed Cabbage Roll Soup

This soup is positively scrumptious!  I was trying to decide what to have for dinner earlier this morning, and looked in the fridge to see a head of cabbage, four tomatoes, onion, a shallot bulb, and a pound of organic grass fed ground beef.  I then looked in my cupboard to see some fresh garlic and some select spices.  I realized that these ingredients reminded me of cabbage rolls, but without the rice.

I didn’t feel like having to put too much effort into it, so I opted for a slow cooker soup rather than the cabbage rolls themselves.  Whoa baby, did this stuff ever turn out GREAT!  It tastes just like a cabbage roll, but in a delicious and easy soup!  Plus, with cabbage as its main ingredient, it’s loaded with nutrition!

UNSTUFFED CABBAGE ROLL SOUP

Ingredients:

  • 4 tomatoes
  • 1 Tbsp. apple cider vinegar
  • 1/2 tsp. garlic granules
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1 tsp. extra virgin olive oil
  • pinch of stevia
  • 1 Tbsp. extra virgin olive oil
  • 1 lb. organic grass fed ground beef
  • 1/4 cup chopped red onion
  • 1/4 cup chopped shallots
  • 1 large garlic clove, minced
  • 1/2 tsp. dried parsley
  • 1/4 tsp. oregano
  • 1/2 tsp. sea salt
  • 8 cups sliced green cabbage
  • 3 cups chicken broth, vegetable broth, or beef broth

Directions

1.) Chop your tomatoes, and place them in a sauce pan with 1 tsp. extra virgin olive, apple cider vinegar, garlic granules, 1/2 tsp. dried oregano, dried basil, and stevia.  Place over medium/high heat and bring to a simmer.  Allow to simmer, stirring occasionally, until most of the juices have cooked off (probably 20 minutes or so).

2.) While the tomatoes are cooking down, heat 1 Tbsp. of olive oil over medium heat in a large frying pan.  Add the onion, shallot, and garlic, and let cook for 3 minutes.  Add the ground beef and cook until it is cooked through.  Add the dried parsley, 1/4 tsp. dried oregano, and sea salt.

3.) Add the tomato sauce to the ground beef and stir to mix.

4.) Transfer the ground beef and tomato mixture to the bed of a slow cooker.  Add the cabbage and broth.  Stir to combine.

5.) Cook on high for 3 hours or on low for 6 hours.

6.) Transfer to bowls, allow to cool to desired temperature, and serve.
