You ever have one of those days where you’re running around trying to get everything done and all of a sudden you realize you have about 20 minutes to get dinner on the table? Well, that was me yesterday evening! Thankfully, I have a go to meal that I make when this happens – it’s delicious, nutritious, and takes minutes to make!
Roasted chicken and veggies are SO easy to make, and they make for a wonderfully filling and complete dinner! This particular recipe is flavored with Italian seasoning and sprinkled with a bit of apple cider vinegar for a flavor and nutrition packed dinner of delight! Oh, and did I mention it only takes minutes to throw together?
ITALIAN ROASTED CHICKEN AND VEGGIES
Ingredients (amount of each ingredient is up to you base don how many people you are serving)
- Broccoli (chopped into small florets)
- Yellow Squash (chopped)
- Zucchini (chopped)
- Red onion (chopped into medium bite-size pieces)
- Cherry tomatoes (Quartered)
- Boneless and skinless chicken breast (chopped into bite size pieces)
- Olive oil
- Italian seasoning
- Garlic granules
- Sea salt
- Apple cider vinegar
Directions
1.) Preheat the oven to 450 degrees, and line a baking sheet with parchment paper.
2.) Prepare your chicken and vegetables and place them in a bowl. Drizzle with olive oil, sprinkle with Italian seasoning, garlic granules, and sea salt. Add a small amount of apple cider vinegar. Toss to combine and coat.
3.) Spread the chicken and veggies onto the prepared baking sheet. Bake in the oven at 450 degrees for 20-25 minutes until the chicken is cooked through.
4.) Transfer to plates and serve.
