Am I the only one that thinks “All Things Pumpkin” season shouldn’t be limited to Autumn? Not only is pumpkin delicious and versatile, it’s fantastic for you! Just check out some of the health benefits of this delicious squash!

This morning I decided to test my theory that pumpkin season should be year round by making some pumpkin chocolate chip oatmeal muffins for breakfast – oh boy, I was right! This squash needs to be a staple in my diet ALL THE TIME, because these muffins (along with all the other amazing and delicious recipes that pumpkin lends itself so well to) are DELICIOUS!

Just look at those! The best part is that these are super easy to throw together! The eggs in them provide a great punch of protein, and the oats add even more fiber to the mix, so it’s not just the pumpkin in these that’s good for you! They make for a great easy breakfast, or snack during the day! Oh, and did I mention they’re delicious?
GLUTEN FREE PUMPKIN OATMEAL CHOCOLATE CHIP MUFFINS
Ingredients (makes 12 muffins):
- 1 cup pumpkin puree
- 4 eggs
- 1/4 cup maple syrup
- 1 cup plain unsweetened almond milk
- 1 tsp. vanilla
- 1 tsp. pumpkin pie spice (or just use 3/4 tsp. cinnamon and 1/4 tsp. nutmeg)
- 1/2 tsp. sea salt
- 2.25 cups gluten free oats
- 1/3 cup oat flour
- 1/2 cup chocolate chips
- 2 tsp. aluminum free baking powder
Directions:
1.) Preheat the oven to 375 degrees, and line a 12-muffin muffin tin with muffin cups. In a medium mixing bowl, add the pumpkin puree, eggs, maple syrup, almond milk, vanilla, pumpkin pie spice, and sea salt. Stir, or whisk, to combine completely. Once combined, add the oats, chocolate chips and baking powder, and stir to combine.
2.) Fill each of the muffin cups in the tin evenly with the batter. Bake in the oven at 375 degrees for 20 minutes, or until cooked through (a toothpick inserted into the center should come out clean).
3.) Allow to cool in the pan for 5-10 minutes.
4.) Remove from the tin, and transfer to a plate to serve. Peel off the muffin cup, and chow down!
