Quinoa, Peas, and Green Beans Salad

This dish turns whomever says that a salad isn’t flavorful into a big fat liar. This stuff is so packed with flavor, and they all go together beautifully to make a delicious and healthy meal.  Not only that, but this is SO easy to throw together, so it’s great if you’re looking for a healthy and delicious meal that doesn’t take too long to prepare.

The main ingredients are peas, green beans, and quinoa, all of which are full of various health benefits.

Ingredients (serves 2-3):

  • 2 cups frozen peas
  • 2 cups frozen green beans
  • 1/2 cup uncooked quinoa
  • 1/4 cup fresh basil, chopped
  • 1 1/2 – 2 Tbsp. chopped shallots
  • 1/2 Tbsp. extra virgin olive oil
  • 2 1/2 Tbsp. apple cider vinegar
  • 1 1/2 Tbsp. raw honey
  • 1/8 tsp. garlic granules
  • 1/4 tsp. sea salt (more or less to taste)
  • 2 oz. crumbled soft goat cheese


1.) Prepare the peas, green beans, and quinoa as directed on the package.

2.) Place all of the ingredients except the goat cheese in a large bowl and toss to combine. Spoon into bowls and top with goat cheese to serve.
