Wow! This soup is AMAZING! Most soups and stew that include ground turkey have more of a Mexican flavor to it (enchilada soup, chili, etc.), but the Italian flavoring of this makes it different, and that is why I love it SO much – it’s delicious! As you will see from the ingredients list, this stuff is packed full of nutrition! That along with it’s delicious Italian flavors makes this soup a big winner in my book!
ITALIAN GROUND TURKEY SOUP
Ingredients:
- 2 Tbsp. olive oil
- 1 lb. ground turkey
- 1 red onion chopped
- 3 garlic cloves, minced
- 1 1/2 cups carrots (Peeled and chopped)
- 1 1/2 cups celery (chopped)
- 4 salad tomatoes, chopped
- 1 pint cherry tomatoes, chopped
- 1 can cannelini beans (drained and rinsed)
- 3 cups homemade chicken broth
- 2 Tbsp. Apple Cider Vinegar
- 1 tsp. dried basil
- 1 tsp. dried thyme
- 1 1/2 tsp. dried oregano
- 1 tsp. sea salt
- 1/4 cup fresh parsley, chopped
Directions:
1.) Chop all your vegetables.
2.) In a large sauce pan, heat the olive oil over medium heat. Add the ground turkey, onion, and garlic, and cook till the turkey burger is completely cooked through.
3.) Add the celery and carrots, and cook till they just start to get tender.
4.) Add the tomatoes, and cook for about 1-2 minutes.
5.) Add the cannelini beans, chicken broth, apple cider vinegar, basil, thyme, oregano, and sea salt. Increase heat to medium high and bring to a boil.
6.) Decrease heat and simmer for 30-40 minutes.
7.) Ladle into bowls and serve.
