Anti-Inflammatory Cauliflower Chicken Soup

If you’ve ever looked into foods and spices that are anti-inflammatory, then you are probably familiar with some of the heaviest hitters when it comes to awesome anti-inflammatory health benefits!

This list certainly isn’t exhaustive, but it gives some pretty great anti-inflammatory foods and spices. From this list, some of the most potent anti-inflammatories are are turmeric, ginger, garlic, cumin, onion, carrot, celery, and cauliflower. Well, guess what?!? This soup, that is SO tasty, contains ALL of these ingredients!

So, not only does this soup taste amazing, it can really help with inflammation or pain, making it a soothing and healing meal!

ANTI-INFLAMMATORY CAULIFLOWER AND CHICKEN SOUP

Ingredients:

  • 1 lb. boneless and skinless chicken breast
  • 1 Tbsp. olive oil
  • 1 head cauliflower, finely chopped
  • 1 red onion, chopped
  • 5-7 celery stalks, chopped
  • 3-5 carrots, peeled and chopped
  • 4-6 garlic cloves, minced
  • 2 tsp. finely shredded ginger
  • 1 1/2 tsp. turmeric
  • 1 tsp. cumin
  • 1 cup coconut milk
  • sea salt and pepper, to taste

Directions:

1.) Bring a large pot of water to a boil. Add the chicken breast and allow to boil for 30 minutes.

2.) While the chicken is cooking, heat the olive oil over medium heat in a large saucepan. Add the onion, celery, and carrots. Cook for 2-3 minutes. Add the garlic and ginger, and cook for another 2 minutes. Add the cauliflower, and allow to cook until heated through – about 5 minutes. When the chicken is done, cut into bite-size pieces and add to the sauce pan, along with the turmeric and cumin. Stir to combine, then pour the water that you cooked the chicken in over the top until everything is covered. Bring to a boil, reduce the heat, and cover the pan. Let simmer for 5-7 minutes.

3.) After the soup has simmered in the covered pan for about 5-7 minutes, remove the lid, and use a masher to mash the vegetables as much as you can. Allow the soup to continue to cook, uncovered, for 10-15 minutes, until everything is tender and cooked through and a good amount of the liquid has cooked off.

4.) Remove from heat, and add the coconut milk. Stir to combine, and transfer to bowls to serve. Season with sea salt and pepper if desired.
