Healthy Loaded Baked Sweet Potato

Anyone that follows my blog knows that I don’t eat potatoes, but I do chow down on sweet potatoes often (they are SO much better for you)! Thus, I decided to throw something together using a baked sweet potato for dinner tonight. I had some leftover homemade sloppy joe mix, so decided to try baking the sweet potato, then topping it with the sloppy joe mix and a dollop of plain Greek yogurt.  Um, SCORE!  This made for an extremely healthy, yet filling and delicious, meal!  So, of course, I had to share it with all of you!

HEALTHY LOADED BAKED SWEET POTATO

Ingredients:

Directions:

1.) Preheat the oven to 400 degrees, and line a baking sheet with aluminum foil.  Wash your sweet potatoes and poke holes in the potato with a fork or knife.  Place in the oven and bake for 50 to 70 minutes, depending on the size of the potato.

2.) While the potato is baking, prepare your sloppy joe mixture using the recipe found here.

3.) When your potato is done baking, take out of the oven and cut in half.

4.) Top with your sloppy joe mixture.

5.) Top with a dollop of greek plain yogurt, and season with sea salt.
