Healthy Homemade Sloppy Joes

We’re starting to get teased here in South Bend with some warmer weather here and there as summer is fast approaching! If you’re from the Midwest, you know what that means – potlucks and sloppy joes! Um, YU-UM! I love myself a good sloppy joe! This is the perfect time for me to share my own homemade sloppy joe recipe with you! This stuff is Healthy (with a capital H), and it is oh so delicious!

As always with my recipes, I fit as many veggies as possible into this recipe for all sorts of goodness and health benefits! I also used ground turkey as opposed to ground beef in this to keep things as healthy as possible, but you can use whatever sort of ground meat you would like. The point is that this is a super HEALTHY sloppy joe recipe that gives you a pretty heavy dose of veggies, so you can feel great about putting this in your body – YAY! You feel like you’re indulging, but in fact, you are filling and fueling your body with all sorts of goodness!

Side note: I used my homemade ketchup in this recipe (click here for the recipe for that), but you can use any ketchup you would like – I just had some on hand at the time when I made this. Okay, let’s get to it!

HEALTHY HOMEMADE SLOPPY JOES

Ingredients

  • 1.5 lbs. ground turkey
  • 1 red onion, chopped
  • 3 stalks celery, chopped
  • 1 yellow pepper, chopped
  • 1 Tbsp. olive oil
  • 3 tomatoes, chopped
  • 1/2 cup homemade ketchup (recipe here) – or you can use another ketchup
  • 1 Tbsp. dijon mustard
  • 1 Tbsp. honey
  • 2 Tbsp. Coconut Aminos
  • sea salt to taste

Directions:

1.) Heat olive oil in a large pan over medium heat.  Add the onion, and cook for 5 minutes.

2.) Add the peppers, and celery and cook for 2 more minutes.

3.) Add the ground turkey and cook until turkey is completely cooked through (about 7-10 minutes)

4.) While the turkey burger is cooking, add the tomatoes, ketchup, coconut amin0s, mustard, honey, and sea salt to a bowl.  Stir to combine.

5.) Add the tomato mixture to the pan and cook till warmed through (about 3-5 minutes.

6.) Spoon out of the pan onto a homemade gluten free hamburger bun (recipe here) or bun of your choice, or enjoy by itself.
