Healthy Cauliflower Fried Rice With Stir Fry Veggies

This dish is one of my favorites! I am always thrilled when I find a recipe made entirely of vegetables that is extremely filling and tastes delicious. This one definitely fits the bill!

Cauliflower rice seems to lend itself well to everything, and this cauliflower fried rice is no exception! Due to this dish being made entirely of vegetables, it is packed full of nutrition! On top of that, the taste…oh boy, the taste is beyond yummy! You are going to love this! Healthy, check! Delicious, check! Filling, check! Let’s do this!

CAULIFLOWER FRIED RICE WITH STIR-FRY VEGGIES

Ingredients: makes 2-3 servings

  • 1 head cauliflower, cut into florets
  • 2 Tbsp coconut oil
  • 1 red onion, cut into thin strips
  • 1/2 tsp. garlic powder
  • 1/4 cup water
  • 1 Tbsp. shredded fresh ginger
  • 2 cups broccoli florets
  • 1 large carrot, peeled and sliced into small sticks
  • 1 red bell pepper, chopped
  • 2 Tbsp. lemon juice
  • 3-4 Tbsp. coconut aminos
  • 2 Tbsp. pepitas (shelled pumpkin seeds)
  • sea salt to taste

Directions:

1.) Place the cauliflower florets into a food processor.  Pulse till the consistency resembles rice.

2.) Heat 1 Tbsp. of the coconut oil over medium heat in a large skillet.  Add 1/2 of the onions and cook till tender (about 5 minutes).  Add the cauliflower rice, garlic powder, and 1/4 cup water.  Cook till water cooks down completely, and cauliflower rice is tender.  Place cooked rice in a bowl.  Cover, and set aside.

3.) In the same skillet, heat the other Tablespoon of coconut oil over medium high heat.  Add the rest of the onions, and cook till tender, stirring constantly.

4.) Add the ginger, broccoli, carrot, bell pepper, lemon juice, and coconut aminos.  Stir constantly and cook till vegetables are crisp tender.

5.) Serve veggies over the cauliflower rice.  Season with sea salt, and top with pepitas.
