If you enjoy Indian food, but don’t like the fact that a lot of Indian food recipes have tons of heavy cream and butter in them, then this recipe is for you! This morning, I woke craving Indian food, so I asked hubby what he would like me to make for dinner this evening with this theme in mind, and he requested my chicken tikka masala! Yum! I love this recipe!
I created this recipe a long while back when I was trying to come up with a dish that tastes as amazing as traditional tikka masala, but with “healthier” ingredients. I can assure you this tastes just as good with the ingredient swaps that I made! On top of that, I make it in my slow cooker, so it is ridiculously easy! I can still remember when I first got my slow cooker many many years ago and how quickly we became great friends thanks to the delicious dishes it can prepare with minimal work on my part. Sorry, nostalgic tangent! At any rate, I popped all the ingredients for this dish in my trusty slow cooker this morning, and went about my day. I came home to amazing smells and dinner ready to go – best. thing. ever.
I served this deliciousness over brown rice, and I had some baked broccoli as a side…I’m pretty sure this may be close to a perfect meal – healthy, filling, easy, and delicious!
HEALTHY SLOW COOKER CHICKEN TIKKA MASALA
Ingredients: (makes 4-6 servings)
- 1.5 lbs. boneless, skinless chicken breasts, cut into bite size pieces
- 1 large onion – chopped
- 15 oz can coconut milk – light
- 1 1/2 cup plain greek yogurt
- 2 roma tomatoes – chopped
- 2 1/2 tablespoons grated ginger root
- 3/4 tsp. garlic powder
- 2 1/2 tablespoons garam masala
- 1 tablespoon cornstarch
- 1 teaspoon sea salt
Directions:
1.) In a food processor, add the coconut milk, yogurt, tomatoes, ginger, garlic powder, garam masala, cornstarch, and sea salt. Mix on high till completely combined.
2.) Chop your chicken and onions, then put them in your slow cooker.
3.) Pour your sauce into the slow cooker over the chicken and onions and stir to combine well.
4.) Cook on high for 4 hours, or on low for 8 hours.
5.) Serve over brown rice with a side of vegetables.
As you can see, the prep time for this is about 10 minutes – the slow cooker does everything else for you! A delicious Indian dish that is healthy, so your taste buds will love it as much as your body will! Enjoy! 🙂
