This afternoon during my mid-afternoon slump at work, I needed a pick me up snack and was craving something sweet! I also wanted something that would give me a boost of energy and mental capacity as opposed to something filled with processed sugars that can drain both of those things. Since I don’t eat processed sugars/white sugars, I decided to come up with a little sweet snack that is good for me and would give me some energy and focus. I also didn’t have a lot of time to make this, since I had to do it during a short break from work.
To the pantry I went to find some good ingredients to put together that wouldn’t take up a ton of time. I had some leftover oven dried strawberries that I made earlier this week, and I also remembered how good the trail mix was that I made with those strawberries, so I went from there.
I wasn’t sure what to call these, but I settled on “trail mix energy bites”. The “trail mix” part is self-explanatory when you see the ingredients, and the “energy bites” part comes from the coconut oil, coconut milk, and coconut flour — all of these ingredients will give you a nice healthy boost of energy. Every single ingredient in these little balls of delight is good for you, so even though you feel like you are eating a cookie, you don’t have to feel bad about putting it in your body! I did, however, have to make sure not to eat the whole batch – yes, they are that good!
Another plus is that you can whip these up in a matter of about 15 minutes (though you do have to chill them for a while after making them, since I was in a rush, I ate a few non-chilled and then chilled the rest for later)! There is no baking involved, and they are SO easy to make! So, without further ado, here is the recipe!
TRAIL MIX ENERGY BITES
Ingredients:
- 1/2 cup almond butter
- 1/2 cup cashew butter
- 1/2 cup coconut flour
- 1/2 cup unsweetened shredded coconut (1/4 cup in the cookies, and 1/4 cup to roll the balls)
- 1/3 cup roasted cashews
- 1/3 cup roasted almonds
- 1/3 cup dried strawberries (you can find my recipe for dried strawberries here)
- 1/4 cup coconut milk
- 1/4 cup coconut oil
- stevia to taste (You could also use honey (about 1 Tbsp), but in this case I opted for stevia
Directions:
1.) Put the cashews, almonds, and dried strawberries into a food processor and pulse till chopped.
2.) Add the rest of the ingredients to the food processor.
3.) Blend on high till the mixture starts to form a ball.
4.) Form balls with the batter, and roll each one in unsweetened shredded coconut till coated.
5.) Once you have used all the batter, place balls in an airtight container and put in the fridge for at least an hour before eating (again, if you’re in a hurry like I was, it’s okay to eat them before chilling, but chilling will make them set better). Store in the fridge.
