Healthy Green Goddess Dressing/Sauce

Okay normally, I wouldn’t post on just a dressing, but THIS DRESSING!!! It’s just…I can’t even…when I…*passes out*! Yeah, that’s a bit dramatic, but it’s seriously SO good! I made this stuff the other day to top some stuffed baked sweet potatoes, and I was so impressed by it that I knew I had to give it a post of it’s own!  It is DELICIOUS!  Whatever the strongest word is for yummy, that’s what this dressing is! It’s really east to throw together, and it’s incredibly versatile!  You can use it as a topping on so many different things, and it just puts the dish together perfectly!  

Additionally, it is big time healthy! With avocado and olive oil as its base, you are getting all sorts of healthy fats, Vitamins C, E, K, and B6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. Phew! Add in all those fresh herbs, and you’ve got a dressing that not only tastes divine, but it also holds the following properties:

  • Good for urinary tract health
  • Strongly anti-inflammatory
  • Packed with antioxidants
  • Helps prevent various types of cancer
  • Analgesic (pain-reducing) properties
  • Helps prevent type 2 diabetes
  • Can aide in combating stress and calming the nervous system

There’s lots more, but I’m too excited to get to the recipe! So, without further ado, here is the recipe for this yum fest!

GREEN DRESSING

Ingredients

  • 1 avocado
  • 1/4 tsp. garlic powder
  • 3 Tbsp. olive oil
  • 3-4 Tbsp. water
  • 2 Tbsp. lemon juice
  • 1 Tbsp. apple cider vinegar
  • 1/4 tsp. sea salt
  • 3 Tbsp. chopped chives
  • 3 Tbsp. chopped parsley
  • 2/3 cups chopped fresh basil
  • 1/4 cup chopped green onion

Directions

1.) Mash the avocado, and add the garlic powder, olive oil, water, lemon  juice, apple cider vinegar, and sea salt.  Stir with a fork till smooth.

2.) Add the chopped chives, parsley, basil and green onion.  Mix well.
