Veggie-Packed Homemade Marinara Sauce

This homemade marinara sauce is the perfect compliment to so many different savory foods! Slather it on pasta, meat, sandwiches, vegetables . . . the list goes on and on! The best part about this is that not only does it taste delicious, but it is beyond good for you! It is packed with veggies, such as onion, squash, peppers, carrots, zucchini, tomatoes (though tomatoes are technically a fruit), and on and on! If you have picky littles (or bigs for that matter 😉) in your home, this is a perfect way to sneak some vegetables into their diet!

Let’s get to the recipe!

Homemade Marinara Sauce

Ingredients:

1 Tbsp. Olive Oil
1 cup red onion, chopped
1 yellow squash, chopped into small pieces
1 zucchini, chopped into small pieces
3 carrots, chopped
1 green pepper, chopped
6-8 tomatoes, chopped
1/2 tsp. garlic powder
1/2 tsp. oregano
1/2 tsp. basil
2 Tbsp. Apple Cider Vinegar
pinch of stevia
Sea Salt, to taste

Directions:

1.) Prepare and chop all your vegetables.

2.) In a large sauce pan, heat 1 Tbsp. of olive oil over medium heat.  Add your onions, green peppers, carrots, zucchini, and yellow squash.  Cook for 5 minutes.

3.) Add your tomatoes, vinegar, stevia, sea salt, garlic, oregano, and basil.  Increase the heat and bring to a boil.  Let cook for 20-30 minutes until the tomatoes have cooked down.

4.) Transfer the contents of the saucepan to a food processor.  Process on high until desired consistency is obtained.
