Healthy and Delicious Bell Pepper Sandwich

Woweeeee! If you are constantly looking for good bread substitutes for whatever reason, it turns out that using a bell pepper hits the mark perfectly! I was out of bread at lunch today, but was really craving a sandwich, so I improvised with what I had, and it turned out so good! Not only that, but as I was making it, I realized the possibilities are endless in terms of fillings, so I will list what I used as fillings in the ingredients, but there’s no reason you have to use them exactly (though this was seriously SO good). The bell pepper makes for a wonderfully sturdy “bread”, provides an awesome kick of Vitamin C, and it tastes so good…did I mention that this tastes so good? Enjoy! 🙂

Bell Pepper Sandwich

Ingredients (makes 1 sandwich):

  • 1 bell pepper, color of your choice (I used orange)
  • Fillings of your choice: I used spinach, red onion, mild goat’s milk cheddar cheese, and sardines. Some other possible choices are chicken, all the veggies, avocado, tomato, ground beef, quinoa, boiled eggs, mushrooms, dressings/condiments… I could go on and on for real.
  • sea salt, optional

Directions:

  1. Cut the bell pepper in half, and remove all the seeds, stem, and skin so that the inside is completely hollowed out (pictured in the left top corner of the image for this post).
  2. This is optional, but I sprinkled the inside of the hollowed out peppers with a bit of sea salt.
  3. Place your fillings in each half of the hollowed out peppers (pictured in upper right corner of post image).
  4. Bring the two filled halves together to create a sandwich (pictured in the lower left corner of the post image).
  5. So cute – the finished product, pictured in the lower right corner of this post’s image shows how sturdy the bell pepper is as a bread substitute for a sandwich, and just wait till you experience the flavor…mmmmm! Enjoy! 🙂
