This afternoon, I was craving a salad, but I didn’t want to make anything fancy that would take up all of my lunch break from work, so I decided to just throw together some ingredients that I know go well together, and the result was a really simple salad that was full of flavor! I wasn’t sure if I would even end up posting on it. BUT, after tasting the salad I came up with, I knew I had to share it with you all!
This salad is REALLY simple, but don’t let that fool you – it is packed full of nutrition and flavor! You will love it!
HEALTHY LUNCH SALAD
Ingredients – Makes 1 serving
- 2 cups arugula
- 1 boiled egg, chopped into small pieces
- 1/4 avocado, chopped
- 7 cherry tomatoes, chopped into small pieces
- 1/4 cup fresh basil, chopped
- 1 oz. firm goat’s milk cheese, shredded
- olive oil
- lemon juice
- sea salt
On a plate, layer the arugula, boiled egg, avocado, and tomatoes. Drizzle with olive oil, and sprinkle with lemon juice and sea salt. Top with the basil and shredded cheese.
