The other day I was talking with a friend who has recently cut out gluten in her diet and we were talking about gluten free bread recipes for sandwiches – these aren’t hard to find but it is a bit of a challenge to find one that actually tastes good!
After talking with her, I was in the mood for bread (of course), so I whipped up a loaf of my own gluten free bread. This recipe is gluten, dairy, and yeast free, so it’s great for people with sensitivities. It’s incredibly easy to make, and it’s also very versatile! This time, I made a “sweeter” bread that I could just eat by the slice, but you can adjust the recipe a bit to make it into a great sandwich bread by taking out the stevia and nutmeg and increasing the recipe to 1.5 the amount of everything. This will make a larger loaf more in the shape of sandwich bread. You can add different spices, nuts, seeds, fruits, etc. to make a variation to your liking.
I am going to share this basic recipe, but like I just said, you can change it to your liking.
HEALTHY AND DELICIOUS GLUTEN FREE BREAD
- 1/2 cup buckwheat flour
- 1/2 cup coconut flour
- 1/2 tsp. nutmeg
- 1/2 tsp. sea salt
- 1 tsp. baking powder (aluminum free)
- stevia to taste
- 1/2 cup canned coconut milk (the cream at the top) – make sure the can is bpa free
- 0-4 Tbsp. honey (the more honey you add, the more moist your bread will be – I used 2 Tbsp.)
- 5 eggs
- 2 Tbsp. melted coconut oil
1.) Preheat the oven to 350 degrees. Use coconut oil to oil a bread pan, then line the pan with parchment paper with enough to hang over both edges, then oil the parchment paper as well.
2.) Sift together the dry ingredients (buckwheat flour, coconut flour, nutmeg, sea salt, stevia, baking powder) into a medium bowl. Set aside.
3.) Use an electric mixer to mix together the “wet” ingredients (eggs, coconut oil, coconut milk, honey) till frothy.
4.) Pour the dry ingredients into the “wet” ingredients and stir to combine till they form a batter.
5.) Place batter into the prepared bread pan and smooth over.
6.) Bake in the oven at 350 degrees for 30-35 minutes until you can stick a toothpick in the center and it comes out clean.
7.) Let cool in the pan for five minutes, then run a knife along the edges and use the parchment paper to pull the bread out of the pan.
8.) Slice and serve.
It’s great by itself, but you can also top it with whatever you would like. As mentioned above, you can also change the recipe a little bit to make it into a great sandwich bread as well. Healthy, easy, and yummy! Enjoy! 🙂
