Cheesy Zucchini Rounds

Oh boy! These little zucchini rounds make for an absolutely amazing mid afternoon snack! They are so simple to make, but don’t let that fool you – they are SO full of flavor and are super good for you as the main ingredient is zucchini!


Ingredients (amounts of each ingredient is up to you)

  • Zucchini
  • Olive oil
  • Garlic Granules
  • Dried Basil
  • Dried Oregano
  • Sea Salt
  • Cheese of your choice (I used goat’s milk mozzarella)


1.) Preheat the oven to 375 degrees and line a baking sheet with parchment paper.  Wash your zucchini and cut into slices that are about 1/3 – 1/2 inch thick.

2.) Place the zucchini slices on the prepared baking sheet.  Drizzle with olive oil, then sprinkle with the garlic granules, dried basil, dried oregano, sea salt, and pepper.  Place in the oven for 15 minutes.

3.) While the zucchini is cooking, shred your cheese.

4.) After the zucchini has baked for 15 minutes, take it out of the oven and top with the shredded cheese.  Place back in the oven and bake for an additional 3-5 minutes until the cheese is bubbly and lightly browned.

5.) Use a spatula to transfer the zucchini rounds to a plate and serve.

YUM YUM YUM!!!  Like I said, so easy to make, but tastes like heaven!  Enjoy! 🙂
