Sweet and salty – were there ever two things that go together better than these? I absolutely love dishes that have a sweet and salty flavor to them, and this dish does not disappoint in that area!
I needed a side dish for dinner. I was baking up some honey garlic chicken, and I was trying to think of something that would go well with it. After looking in the fridge and seeing that we had cauliflower and carrots to work with, I just went from there, while trying to keep the sweet and salty theme going.
Wow, did these ever go over well! They are so delicious, you would never know just how good it is for you! Not to mention, these cauliflower and carrots are SO easy to throw together…but you don’t have to tell your family that – they will think you slaved over a hot stove to bring such deliciousness to the table! 🙂
HONEY MAPLE CAULIFLOWER AND CARROTS
Ingredients (makes 3-5 servings):
- 1 medium head of cauliflower, chopped into small florets
- 3-4 cups of baby carrots, chopped in half
- 2 Tbsp. olive oil
- 2 Tbsp. raw honey
- 2 Tbsp. maple syrup
- 1/2 tsp. garlic granules
- 1/4 tsp. onion powder
- 1/4 tsp. thyme
- 1/4 tsp. oregano
- sea salt and pepper, for seasoning
Directions:
1.) Preheat oven to 425 degrees, and line a baking sheet with parchment paper. Add all the ingredients except the sea salt and pepper to a large bowl, and use a large spoon to stir making sure all of the vegetables are well coated. Pour the contents of the bowl onto the prepared baking sheet, and spread out evenly.
2.) Bake in the oven at 425 degrees for 20-25 minutes.
3.) Transfer to plates and season with sea salt and pepper.
