I am super excited about this graham cracker recipe. For one thing, these little guys are REALLY yummy. Second, they are so easy to make! There’s only a few ingredients, and the main one is ground flax seeds, which means a whole slew of health benefits, such as lots of omega-3’s, gobs of antioxidants, a good source of various vitamins and minerals, and rich in lignans!
You can buy ground flax seed, but the only problem with that is that ground flax seed goes rancid quite quickly. Thus, the better option is to buy whole flax seeds, and then just grind them in a coffee grinder when you need ground flax seed. It also helps to store the flax seeds in the fridge or freezer. In a bind, buying ground flax seed will work just fine, but just try to use it quickly.
Another thing to keep in mind with flax seed is that they contain a very high amount of lignans, which are phytoestrogens, and though these guys have a lot of health benefits, some people are quite estrogen sensitive, so if you fall into this category, it is a good idea to check with your medical provider before adding flax into your diet regularly.
Okay, back to this recipe! Like I said these things are absolutely delicious. I can’t say they taste EXACTLY like the store bought graham crackers, but I can say that they are pretty darn close, and that these guys are much better for you than any store bought version of a graham cracker. I can also say that they go awesome with a dollop of almond butter on top! So, all in all, we have that they are delicious, easy to make, gluten free, and contain a whole bunch of health benefits…score!
Ingredients (makes about 5-20 crackers depending on how big or small you cut them)
- 1 cup flax seeds, ground in a coffee grinder
- 1/2 tsp. cinnamon
- stevia, to taste
- 1/4 – 1/3 cup water
Directions
1.) Preheat the oven to 400 degrees. In a medium mixing bowl, add the ground flax seed, cinnamon, and stevia. Stir to combine. Add the water, and stir to form a dough ball. Start with just 1/4 cup water, and add up to 1/3 cup as needed. You want to be able to roll your dough out with a rolling pin.
2.) Place your dough between two pieces of parchment paper, and use a rolling pin to roll it until it is about 1/4 inch thick. Remove the top layer of parchment paper, and place the bottom layer with the flattened dough on a baking sheet. Use a knife to lightly score the dough so that you will be able to break it into crackers when it comes out of the oven.
3.) Bake in the oven at 400 degrees for 25-30 minutes until the edges begin to brown. Keep an eye on it so that it doesn’t burn.
4.) Remove from the oven, and break the dough into crackers along the score lines. Transfer to a bowl or plate to serve.
