All the Greens Chicken Salad

It was one of those days where dinner consisted of whatever I could find in the refrigerator, and in this case, it was perfection! I started rifling through the fridge at dinner time, and saw that I had a whole bunch of green vegetables!

I wasn’t sure how they would all go together, but I knew that all those green veggies were going to supply me with all sorts of health benefits and nutrients.

So, I decided to cook some of them, leave some of them raw, chop up some chicken that I had previously cooked in the pressure cooker, and see what the result was! You can thank me later, because though this is simple, it is absolutely delicious!!!

Ingredients (makes 1 large or 2 medium servings)

  • 1/2 cup frozen peas
  • 1/2 cup frozen green beans
  • 1/4 lb. brussels, halved
  • 2 celery stalks, chopped
  • 1/2 avocado, sliced
  • 1/2 cucumber, chopped
  • 1 small bunch of broccolini, cut into florets
  • 1 large handful of spinach (1 – 2 cups)
  • 1/4 – 1/2 cup chopped fresh dill
  • 4 – 8 oz cooked chicken breast, chopped
  • 1 Tbsp. olive oil
  • 1-2 Tbsp. lemon juice
  • sea salt and pepper to taste

Directions:

1.) Cook the green beans and peas together according to the package instructions. Steam the brussels, broccolini, celery, and spinach for about 10 minutes.

2.) Place all of the ingredients on a plate, drizzle with the olive oil, sprinkle with the lemon juice and fresh dill, and season with sea salt and pepper.

Look at all that green!!! Delicious and oh so nutritious! Enjoy! 🙂
