This seemingly simple breakfast is SO yummy! Yesterday morning I was in a hurry to get breakfast made, as I was running a bit late for work, so I had to opt for something easy and simple. Thankfully, I found a bag of cauliflower rice in the freezer, so I figured I would just cook up some veggies with it, and then top it with a couple of poached eggs – Poof! Delicious and incredibly healthy breakfast in minutes!
The best part of this dish is that you’re starting your day with loads and loads of veggies – PERFECT way to jump start your day and give you gobs of nutrients to carry you through till lunchtime!
Ingredients:
- 1 Tbsp. coconut oil
- 1/4 red onion, chopped
- 1 small leek, chopped
- small chunk of ginger, grated
- 1 garlic clove, minced
- 1 carrot, grated
- 1 bag of frozen cauliflower rice
- 2 cups chopped arugula
- 1/8 tsp. turmeric
- 1/4 tsp. cumin
- 2 poached eggs (my recipe for perfectly poached eggs can be found here)
- sea salt and pepper for seasoning
Directions:
1.) Melt the coconut oil over medium heat in a large frying pan. Add the onion, leek, ginger, garlic, and carrot. Cook for about 3-4 minutes until the onions start to sweat. Add the cauliflower rice and cook for 5 minutes. Poach your eggs while the cauliflower rice is cooking. Add the arugula, turmeric, and cumin. Cook for about 1 minute until the arugula is completely wilted.
2.) Transfer the veggie mixture to a plate, and top with the poached eggs. Season with sea salt and pepper, to taste. Enjoy!
